Guinness Cakes for St Patricks Day

Its St Patricks Day next Wednesday. A great excuse to drink a few pints of the black stuff. St Davids Day (Welsh Patron Saint) is, in contrast to St Patricks Day, a great excuse to pick dafodills and dress up in silly costumes!

In celebration of Guiness Day. Heres a great Guiness Cake recipe:

• 1 ½ Cups of Guinness
• 1 Stick of Butter plus 1 Tbsp. (Unsalted)
• ¾ Cup Unsweetened Cocoa Powder
• 2 Cups Dark Brown Sugar
• ¾ Cup Sour Cream
• 2 Eggs
• 1 Tbsp. Vanilla Extract
• 2 Cups Flour
• 2 ½ tsp. Baking Soda

MELT the butter in a saucepan over medium heat along with the Guinness.

REMOVE pan from the heat and whisk in the cocoa and sugar.

MIX together sour cream, eggs, and vanilla in a separate bowl. Add to the beer and butter mixture.

MIX together the flour and baking soda in another bowl and fold into the liquid mixture. The batter will still be a little lumpy but will bake out in the oven.

BAKE the cupcakes at 350 degrees for about 20 minutes. Let them cool completely before frosting. Enjoy!
